The Persian Cuisine
Persian cuisine holds secrets that have made it both unique and world-renowned. Much like the handwoven carpet, Iranian architecture, Persian mysticism, and literature, this cuisine can be seen as a highly developed art form and one of the great achievements of Persian culture.
Like a refreshing spring, Persian culinary art has nourished and influenced kitchens far beyond Iran’s borders. It became the foundation of cooking among Muslim peoples and across the Indian subcontinent, and through Spain and Italy it even reached Southern Europe. Its diversity and refinement earned it the title “the French cuisine of the Orient” centuries ago.
Persia’s location along the Silk Road and its rich history brought together a variety of influences—from China, India, and the Mediterranean—into a unique culinary tradition. Persian cooking relies above all on fresh vegetables, rice, herbs, lamb, beef, chicken, fish, and freshly baked bread. The most essential ingredient is rice, often accompanied by the world’s most precious spice: Persian saffron. There are few dishes that are not based on saffron rice or at least served alongside it.
Unlike some neighboring cuisines, Persian food is not excessively spicy, fatty, or dominated by garlic, as is common in Turkey or parts of the Arab world. Instead, Persian dishes come to life through the delicate aromas of fresh herbs and fine spices, which highlight and complement the natural flavor of each ingredient.
